Homemade Sweet Potato Fries

I loooooooooooooooooove sweet potato fries!!!!!
I first made them at home using this recipe, from the "12 Best Foods Cookbook":
(The other 11 "best foods" according to this cookbook are: Blueberries, black beans, oatmeal, salmon, spinach, broccoli, tomatoes, CHOCOLATE, walnuts, soy, and onions!)

I always tinker with recipes and make them exactly how I like them, 
so here is my version of this original recipe:

 First things first, put on a cute apron before you start cooking... it just makes it more fun :)

(P.S. If you are a guy and don't really feel like wearing a cute apron... maybe pour your wife a glass of wine [or crack open a cold Coors Light?!! Amy Sue!], tell her to sit back and relax, and then cook the sweet potato fries with your shirt off maybe? 
 I'm sure she won't complain.)

Ok next preheat your oven to 450 degrees.

I use yams, because they have a brighter orange color than sweet potatoes.
Wash & scrub them real good.

 Cut off the ends and then cut each potato in half like this:

 Now cut those pieces in half...
...and in half again...
...and one more time!  
Even more if some pieces turn out bigger than the others.
You want the slices to be fairly uniform in size.

Next put the slices on a baking sheet and drizzle with Extra Virgin Olive Oil.
Next sprinkle with salt, rosemary, and thyme.
Toss the fries and toppings with your hands until evenly coated.
Next line the slices up nice and evenly on the baking sheet.

Bake for 15 minutes and then take them out to turn each fry over with a tongs.
This part is a little tedious but they won't cook very evenly if you skip this step.
So just do it.
:)

 Bake 15 more minutes (or more depending on how strong your oven is and/or how crispy you like them).

Once they are done, shake some more salt on, and place them out on a serving platter!

Oh I almost forgot, make sure your taste testers approve before serving. 
This particular taste tester prefers them with no skin... so he just peels the skin right off :)
